Virtual Surface with Object
You may wonder which comes first: the object or the surface? I would initially set the scale of the “framed” view using the Virtual Surface to set up the perspective. However the Object would take priority where overlapping occurs. In this example the Object is in the fore-ground overlapping the surface in the back-ground.
On-site sketching requires techniques somewhat different from “studio drawing”. One has to assess the “nature” of the view to understand how to transcribe the 3D view onto the sketchbook page. Every artist has a different approach.
